December’s featured Cheese of the Month comes from the scenic Sequatchie Cove Farm in Tennessee. It’s a simple, rustic tomme that’s named Cumberland, after the plateau that surrounds the farm. A raw cow’s milk cheese, Cumberland is aged for 90 days and has a natural rind. Just as the cows’ diet changes with the seasons, Cumberland’s character changes too, but the overall flavor is buttery and earthy, with a tangy, grassy note and hints of macadamia nut.
